Tasting Notes
The wine is a pale straw color with aromas of lychee, honeysuckle and apricot with hints of chamomile, thyme and lemon zest. It’s dry, crisp with flavors of citrus and minerals. The finish is rounded with notes of stone fruit. It’s refreshing when served chilled on its own or with food. It is ready to drink now.
Winemaking
The grapes were hand picked early in the morning, crushed and then pressed into a stainless steel barrel for fermentation. It was inoculated with wine yeast and fermented to dryness. The wine was racked once. Bottling took place after 10 months of aging.
