Description
Tasting Notes
The wine is a beautiful red color and slightly opaque. It initially exhibits vibrant aromas of rose petal, strawberry and raspberry. With time, the wine evolves to reveal flavors of wild mushrooms, pie crust, black tea and a hint of smoke. The wine exudes a bright elegant structure with a velvety softness. The fabulous flavors seem to linger forever in the finish. Drink now or age for 10-15 years. The wine is an excellent pair with food.
Winemaking
The grapes were picked early in the morning to allow nature to keep them cool. They were held overnight and gently destemmed the following morning into open top fermenters. A slight inoculation of wine yeast allowed native yeasts to survive well into the fermentation. Punch downs were twice a day. The wine was aged in barrel, with slightly less than 25% being new French oak. The wine was not racked prior to bottling.
